During testing, the size and degree of rice chalkiness can be clearly reflected, which is beneficial for inspectors to make accurate judgments. Determination method 1. Chalk grain rate: Randomly take 100 samples from whole polished rice and place them on a milky white board for observation. Pick out rice grains with chalkiness (including heart white, belly white, and back white) and calculate the percentage of chalky rice according to the formula. Repeat once and take the average of the two measurement results to obtain the chalky grain rate. Chalk grain rate=number of chalky grains/total grains * 100 2. Chalk size: Randomly select 10 chalky grains and place them flat on a milky white board. Visually measure the percentage of chalky area per grain to the total grain area, and calculate the average chalky area. Repeat once and take the average of the two measurement results to obtain the chalkiness size. 3. Chalkiness degree: Chalkiness degree refers to the percentage of chalky area in the whole polished rice sample to the total sample area.
