The MJ-III double head gluten analyzer consists of three single vertical instruments: a double head gluten washing machine, an MJZ gluten index tester, and a drying machine. An instrument used to determine the wet (dry) gluten content, gluten quality (gluten index), and gluten water holding capacity in flour, especially suitable for users with large sample sizes. Widely used in food and flour processing, grain and oil research institutions, grain storage and other departments.

Working principle of gluten analyzer/double head gluten analyzer:
10g of flour or whole wheat flour is mixed with 5ml of salt water in a washing cup with a sieve for 20 seconds to form a dough, and then washed with salt water for 5 minutes to obtain gluten. Under centrifugal action, the wet gluten content and gluten index can be calculated according to the method specified in SB/T10248-95.
